Friday Night Dinner: Sausage Part 01


Friday nights are sausage nights ... (sounds dirty) ... so how about I explain

After moving to Maryland, my hubby got invited by my cousin's husband to come join a group of guys that twice a year make their own sausage. It's pretty awesome; they grind all the meat, find a butcher that will sell them fat, stuff the casings, etc. They've tried a few different recipes over the years.

As I'm part of the wives club, our job is to measure out the spices, chop up any herbs or grate garlic or lemon. Then we just get to sit around, drink, gossip, and sample the test patties. Pretty sure we win in the grand scheme of things.

This past time they decided on making Sweet Italian, Bratwurst, and Breakfast sausage. And we have over 20lbs of sausage in our freezer!!!

So Friday night was declared sausage night so that we can get through it before the next time. However there are just so many times I can eat sausage with onions, pepper, and mustard or sausage with tomato sauce and parmesan cheese.

I decided to get a little creative tonight. Usually once a night we have flatbreads; and our favorite tends to be fresh mozzarella with a 'pesto' base and topped with red onions and fresh tomato slices. For our dinner tonight I cooked the sausage, used a long roll, then topped the sausage with the same ingredients. Success! It was delicious! Far better than the small old routine, or maybe that's why it was so delicious ... ponder ... either way this is definitely entering the Friday night rotation!

Ingredients:
  • 2 Sweet Italian sausages
  • 2 long rolls
  • 1/2 red onion
  • 1 fresh tomato
  • 8 oz of fresh mozzarella
  • 1 cup basil leaves
  • 1/2 tbsp olive oil
  • 1 tbsp grated parmesan cheese
  • 1 clove of grated garlic
Recipe for hot sandwich:
  1. Cook sausage, varies depending on what you're using
  2. Toast roll
  3. Apply pesto to roll
  4. Place cooked sausage on top of roll with pesto; add mozzarella, onions, and tomatoes
  5. Broil for about 4-5 minutes until cheese melts
  6. ENJOY!
Recipe for 'pesto':
  1. Add basil, olive oil, parmesan, and garlic to food proccessor
  2. Mix til it's a paste like consistency
